Once Windows is installed and up to date, you pop your OS X DVD in and run Apple setup.exe to install the services and drivers, BootCamp control panel (OSS Switcher) and Apple Software Update - among others.
After reboot Apple Update will show up with the latest BootCamp 2.x update, OR you can at that point download the standalone 2.1+ .exe and apply it manually.
